Spiced Apple Loaf   

Tis the season to be baking our little hearts away. This Spiced Apple Loaf is fluffy, warm and so so delicious. Might just be one of my favorites of the season… Highly recommend giving it a try. Make sure to add a shmeer of cream cheese for the full effect. ;)

Ready in 45-50 minutes minutes

1 loaf, 8-10 servings

Ingredients

Crumble topping 

  • 1/2 cup flour

  • 1/4 cup packed brown sugar

  • 1/3 cup rolled oats

  • 1/2 tsp cinnamon

  • 1/2 tsp salt

  • 1/3 stick butter, melted 

    Apple Batter

  • 1 3/4 cup flour

  • 1 tsp baking soda

  • 1/4 tsp baking powder

  • 1 tablespoon cinnamon

  • 1/2 tsp ginger

  • 1/4 tsp nutmeg

  • 1/4 tsp all spice

  • 1/4 tsp cloves

  • 1 tsp sea salt

  • 6 tbsp butter, softened

  • 1 cup brown sugar, packed

  • 2 eggs

  • 1 cup plain Greek yogurt, unsweetened 

  • 1 1/2 tsp vanilla extract

  • 2 cups diced apples (~2 large apples, peeled)

    Preparation

  1. Preheat the oven to 150 degrees Fahrenheit and line a bread pan with parchment paper.

  2. To assemble crumble topping, add all the perspective ingredients to a small bowl and combine well. Set aside.

  3. To make the batter, combine the butter and brown sugar in a large bowl. Beat on med/high speed for 3 minutes. Add the eggs, Greek yogurt, vanilla. Mix until well combined.

  4. In a separate medium bowl, combine dry ingredients re: flour, baking soda, baking powder, cinnamon, ginger, nutmeg, all spice, and cloves.

  5. Add dry ingredients into the wet. Fold until barely combined (small patches of dry ingredients are okay). In a seperate small bowl, dust the diced apples in a tbsp of flour. This helps prevent the apples from sinking to the bottom of the loaf.

  6. Add the dusted apples to the mixture, and fold until just combined. Careful to not over-mix! 

  7. Pour into the loaf pan and bake for 30-35 minutes or until a toothpick comes out clean. Allow loaf to cool for 10-15 minutes before digging in.

  8. Serve & enjoy!

    -Highly recommend serving with a small shmeer of cream cheese. Yum!
