Date Chunky Monkey Bars
Ingredients:
• 8-10 Medjool dates, pitted
• 2 large bananas, sliced
• 1 ½ cups roasted salted walnuts
• 1 scoop vanilla protein powder
• 8 oz dark chocolate, melted
(Flaky salt obvs)
Instructions:
1. Press dates into a thin layer between parchment and plastic wrap, then freeze.
2. Line a sheet tray with plastic wrap and arrange banana slices in a single layer.
3. Blend walnuts with protein powder, then press evenly over the bananas. You can omit the protein powder if you’re not into it!
4. Place the frozen date layer on top and freeze overnight.
5. Slice into bars, coat in melted dark chocolate, and freeze until set.
