Pumpkin Pie Smoothie

Do you ever wish vegetables could taste as good as pie? If you want a delicious and nutritious pumpkin pie in a glass, you're going to have to trust me and give this one a try. Might just be my favorite smoothie yet.

Important things to note: 

  • Freeze pumpkin puree into ice cube trays.

  • Frozen cauliflower is key.

  • Go ahead and freeze extra because if you’re anything like me, you’re going to want this smoothie all season long (I’m obsessed).

Ready in 8-10 minutes

2-3 servings

Ingredients

  • 1 cup pumpkin puree, FROZEN

  • 1 cup frozen cauliflower

  • 2 tablespoons greek yogurt 

  • ⅓ cup milk of choice (or more to reach desired consistency)

  • 1 scoop vanilla protein powder

  • 1 ½ tablespoon almond or pecan butter

  • 1 teaspoon pumpkin pie spice

  • 2 medjool dates

Preparation

  1. Make sure to plan ahead and freeze your pumpkin puree in ice cube trays the night before.

  2. Add all ingredients to a high speed blender and blend until smooth. 

  3. Garnish with coconut whip or extra pecans if desired and enjoy

Note:You can throw the extra servings back in the ice cube trays and store in the freezer. Later, add them to a blender with a little milk to make a thick and creamy pumpkin spice ice cream. UNREAL.
