Pumpkin Pie Smoothie
Do you ever wish vegetables could taste as good as pie? If you want a delicious and nutritious pumpkin pie in a glass, you're going to have to trust me and give this one a try. Might just be my favorite smoothie yet.
Important things to note:
Freeze pumpkin puree into ice cube trays.
Frozen cauliflower is key.
Go ahead and freeze extra because if you’re anything like me, you’re going to want this smoothie all season long (I’m obsessed).
Ready in 8-10 minutes
2-3 servings
Ingredients
1 cup pumpkin puree, FROZEN
1 cup frozen cauliflower
2 tablespoons greek yogurt
⅓ cup milk of choice (or more to reach desired consistency)
1 scoop vanilla protein powder
1 ½ tablespoon almond or pecan butter
1 teaspoon pumpkin pie spice
2 medjool dates
Preparation
Make sure to plan ahead and freeze your pumpkin puree in ice cube trays the night before.
Add all ingredients to a high speed blender and blend until smooth.
Garnish with coconut whip or extra pecans if desired and enjoy
Note:You can throw the extra servings back in the ice cube trays and store in the freezer. Later, add them to a blender with a little milk to make a thick and creamy pumpkin spice ice cream. UNREAL.
