Spicy Roasted Broccoli and Feta Salad
This is one of my go-to salads come colder winter months. I love the warmth that the roasted spicy broccoli brings to a bowl of veggies. It is incredibly easy to throw together and a great salad to prep ahead of time if that's your jam. I will usually make a couple servings and throw it together during a busy week. Its simple yet addicting.

Ingredients
Spicy Roasted Broccoli
1 large head broccoli, broken into small florets
2 tablespoons avocado oil (or any neutral oil)
2 tablespoons lemon juice
1 teaspoon red pepper flakes (adjust to taste and tolerated spice level)
1 teaspoon spicy honey
¼ teaspoon salt
¼ teaspoon pepper
Salad
4 cups mixed greens
1 (15 oz) can chickpeas or 1 ½ cup cooked chickpeas
1 cup crumbled feta cheese
1 cup cooked farro
½ cup sunflower seeds or roasted almonds
Preparation
Gather all ingredients and preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
In a medium bowl, add broccoli along with oil, lemon juice, spicy honey, red pepper flakes, salt and pepper. Combine until florets are evenly coated.
Transfer to a lined baking sheet and roast for 12-15 minutes or until the edges are crispy.
While broccoli is roasting, add salad ingredients to a bowl. Add desired amount of dressing (Golden Tahini Dressing) and toss to combine. Add broccoli and enjoy!
