Spicy Roasted Broccoli and Feta Salad

This is one of my go-to salads come colder winter months. I love the warmth that the roasted spicy broccoli brings to a bowl of veggies. It is incredibly easy to throw together and a great salad to prep ahead of time if that's your jam. I will usually make a couple servings and throw it together during a busy week. Its simple yet addicting.

Ingredients

Spicy Roasted Broccoli 

  • 1 large head broccoli, broken into small florets 

    • 2 tablespoons avocado oil (or any neutral oil)

    • 2 tablespoons lemon juice

    • 1 teaspoon red pepper flakes (adjust to taste and tolerated spice level)

    • 1 teaspoon spicy honey 

    • ¼ teaspoon salt

    • ¼ teaspoon pepper 

Salad 

  • 4 cups mixed greens

  • 1 (15 oz) can chickpeas or 1 ½ cup cooked chickpeas

  • 1 cup crumbled feta cheese

  • 1 cup cooked farro 

  • ½ cup sunflower seeds or roasted almonds 

  • Golden Tahini Dressing

Preparation

  1. Gather all ingredients and preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. 

  2.  In a medium bowl, add broccoli along with oil, lemon juice, spicy honey, red pepper flakes, salt and pepper. Combine until florets are evenly coated.

  3. Transfer to a lined baking sheet and roast for 12-15 minutes or until the edges are crispy. 

  4. While broccoli is roasting, add salad ingredients to a bowl. Add desired amount of dressing (Golden Tahini Dressing) and toss to combine. Add broccoli and enjoy!
