Coastal Italian Farro Salad

6-8 servings 

Ingredients

  • 1 cup farro, cooked

  • 1 cup radicchio, shredded

  • 1 cup chickpeas

  • 1 cup spinach, chopped 

  • 1/2 ricotta salata dry, or feta 

  • 1/2 cup pepperoncinis, chopped

  • 1/2 cup castelvetrano olives 

  • 1/2 cup apricots, diced

  • 1/2 cup pistachios

  • 1/4 cup fresh dill, chopped

  • 1/4 cup fresh basil, chopped

  • 1/4 cup fresh Italian parsley, chopped

  • Italian Basil Vinaigrette 

Preparation

  1. Gather a large mixing bowl and add all your salad ingredients (farro, radicchio, chickpeas, spinach, ricotta salata, pepperoncinis, olives, apricots, pistachios, dill, basil, parsley and basil vinaigrette. Toss well to combine and enjoy! 

  2. Note: stores well in the refrigerator for x3-4 days, just wait to dress a la carte.
