Copycat Nordstrom Cafe Cilantro Lime Salad with Shrimp

My mom and I were Nordstrom Cafe ‘regulars’ when I was young. The ‘Makers’ chocolate mint match sticks had mini me sold. That hasn’t changed but my newfound love for their Cilantro Lime Salad with Shrimp has. It is immaculate. If you stuck around for my 2022 salad series where I made 15 fun salads in 15 days, this was day #2 and quite possibly my favorite.

Ready in 30 minutes

Serves 6 people

Ingredients

  • 1 cup Cilantro Lime Vinaigrette 

  • 30 extra-large (16/20 count) shrimp, peeled and deveined

  • ¼ cup extra-virgin olive oil 

  • 3 cloves garlic, minced

  • Kosher salt and black pepper, to taste

  • 3 ears corn, husked 

  • 1 pound mixed baby greens

  • 2 cups shredded monterey jack cheese

  • 2 cups grape tomatoes, halved

  • 2 cups tortilla chips, crushed 

  • Garnish 

    • Cilantro

    • Lime wedges

Preparation

  1. To make the Cilantro Lime Vinaigrette, combine rice vinegar, lime juice, honey, avocado oil, garlic, chili powder, smoked paprika, cilantro, and salt. Whisk until emulsified and smooth.

  2. Either on the grill (preferable) or in a large sauté pan, add olive oil, garlic, salt, and pepper. Bring to medium high heat and add shrimp. Cook until the shrimp is opaque and cooked through.

  3. Combine greens, corn, Monterey Jack cheese, tomatoes and roasted red pepper in a large bowl. Drizzle with desired quantity of vinaigrette (**remember you can always add more).

  4. Portion salad to six medium salad bowls. Garnish with crushed tortilla chips, black pepper and cilantro before arranging five shrimp on each salad. Serve immediately.
