Buffalo Chickpea Cauliflower Wraps

Buffalo Cauliflower Chickpea Wraps with a greek yogurt dipping sauce. Pumpkin isn’t the only thing back in season this fall. Cauliflower is back and  better, baby. Try this buffalo cauliflower recipe with chickpeas for added protein and fiber. Recipe included below! I hope you enjoy.

Ingredients

Buffalo Cauliflower Chickpeas

  • 1 head cauliflower, broken into bite sized florets

  • 2 cans chickpeas, rinsed and dried

  • 1/2 cup blue cheese

  • ½ cup Franks Red Hot

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 teaspoon honey

  • 2 tablespoons butter or neutral oil (DF)

Greek Yogurt Ranch

  • 1 cup plain greek yogurt

  • 2 tablespoons chopped fresh dill (or 1 tablespoon dried) 

  • 1 tablespoon (a couple sprigs) chopped parsley

  • 2 tablespoons chives

  • 1 tablespoon lemon juice

  • ½ teaspoon salt/½ teaspoon pepper

  • ½ teaspoon garlic powder 

  • ½ teaspoon paprika

  • 1 teaspoon honey

Additional 

  • 8 large tortillas

  • 1 head romaine lettuce, shredded

Preparation

  1. Gather all ingredients and preheat the oven to 425 degrees. Line a baking sheet with parchment paper.

  2. In a small saucepan, combine the Franks Red Hot, honey and butter/oil. Bring to a simmer for 6 minutes. 

  3. In a large bowl, add cauliflower florets, chickpeas, blue cheese, paprika, garlic powder, salt, pepper and buffalo sauce. Mix until all florets are evenly coated.

  4. Add to the lined baking sheet and roast for 18-20 minutes.

  5. To make the yogurt ranch sauce, combine greek yogurt, dill, parsley, chives, lemon juice, paprika, garlic powder, and honey to a small bowl. Season to taste.

  6. Allow buffalo chickpeas and cauliflower (BCC) to cool for 4-5 minutes. Then, add 1/3 cup BCC mixture onto a single tortilla. Add a small handful of romaine lettuce and a dollop of your greek yogurt ranch. Wrap like a burrito by first folding in the sides then folding over an edge and rolling it into a wrap. Repeat. 

  7. Bring 2 tablespoons of a neutral oil to heat in a large skillet. Add wraps folded side down. Allow for the tortilla to brown and then flip (roughly 2-3 minutes each side). 

  8. Serve with additional greek yogurt ranch and enjoy!
